Champagne Mojitos
Ingredients
- 3/4 cup sugar
- 3/4 cup water
- 1 1/2 cups packed mint leaves, plus 12 sprigs, for garnish
- 6 limes, cut into wedges
- 2 cups Treaty Oak Rum
- Cracked ice
- 3 cups Champagne or sparkling wine
Directions
- In a small saucepan, combine sugar and water and cook over high heat until sugar dissolved. Let cool to room temperature.
- In a large pitcher, combine sugar syrup with mint leaves, lime wedges, and muddle with a wooden spoon.
- Add rum and stir well. Strain into another pitcher.
- Fill tall glasses with cracked ice and pour in drink, filling them about 2/3 full.
- Top with Champagne, garnish with mint sprigs and serve.

Ingredients
- Ice
- 1 oz blended Scotch
- 1 oz sweet vermouth
- 1 oz cherry liqueur
- 1 oz fresh orange juice
- 1 orange wheel
Directions
- Fill a cocktail shaker with ice. Add the Scotch, vermouth, cherry liqueur, and orange juice.
- Shake well and strain into a chilled martini glass.
- Garnish with the orange wheel.

Bourbon Sweet Tea
Bourbon Sweet Tea
Ingredients
- 3/4 cup sweetened tea
- 3 tbsp applejack bourbon
- 1 tbsp fresh lemon juice
- Ice
- Club soda
- Garnishes: apple slice, cinnamon stick
Directions
- Combine sweetened tea, applejack bourbon, and fresh lemon juice in a cocktail shaker filled with ice.
- Cover with lid; shake vigorously until thoroughly chilled.
- Strain into a 10-oz. glass filled with ice.
- Top with club soda. Garnish, if desired.

Sweet Basil Cocktail
Sweet Basil Cocktail
Ingredients
- 10 basil leaves, plus 1 basil leaf for garnish
- Ice
- 3 oz Lillet blanc
- 1/2 oz Waterloo gin
- 1 oz Simple Syrup
Directions
- In a cocktail shaker, lightly muddle 10 basil leaves.
- Add ice, Lillet, Waterloo gin, simple syrup and shake well.
- Strain into a chilled coupe and garnish with basil leaf.
Blueberry Bubbly
Ingredients
- 12-15 blueberries
- 0.5 oz lemon juice
- 1 oz gin
- 3 oz Brut sparkling wine
- ice
Directions
- In large wide mouth glass, muddle blueberries without turning to mush.
- Add lemon juice, gin, and handful of ice. Stir or shake gently.
- Add sparkling wine, then pour into a champagne glass.

- .75 oz Fresh lemon juice
- .75 oz Simple syrup
- 1.5 oz Waterloo Gin
- Club soda
- Lemon wheel and cherry
Directions
- Add the lemon juice, simple syrup and gin to a shaker. Fill with ice.
- Shake well and strain into a highball or Collins glass filled with fresh ice.
- Top with club soda and garnish with a lemon wheel and a cherry.
